This scrumptious mulberry pie is sold at the historic Gifford House at Capitol Reef National Park, located 12 miles west of Torrey and Scenic Byway 12 in southern Utah. The mulberries are hand picked at the orchard in Fruita, a historic settlement located within the National Park. These pies are delicious with a side of homemade ice cream, which is also sold at the park.
Mulberry Pie
Makes 12 - 5" Deep Dish Pies
Start with:
12 oz. water 20 oz. sugar .25 oz. salt .12 oz cinnamon 1.5 oz. lemon juice
Add to kettle and bring to boil.
Mix together:
6 oz. water 3 oz. cornstarch
Pour into boiling kettle and bring to boil again. Then add
3 oz. butter
Pour over 5 pounds of mulberries. Place in 5" deep dish pie shells. Place crumble crumb topping on top.
Bake at 350 degrees for 45 minutes or until filling is bubbly and crust is golden brown.
